Each recipe brings with it the region’s tradition in the form of products derived from the pig slaughter, such as chorizo sausages or black pudding, which in this case is also made from pumpkin, and bacon.
Of course, there will have to be room for desserts, each one in its own time. At Christmas, torrijas; at Easter, small doughnut-like pastries known as rosquillas, and peach-based dishes (the most typical fruit of this area) during the summer months.
